Are each of the category options mutually exclusive of other categories? For example would the “restaurants” category include “chinese food restaurants” even though they are separate categories?

The short answer is yes. Long answer, Google Maps Scraper extracts the data the same way it’s placed on Google Maps by your queries. Google usually returns “chinese food restaurants” when you search by “restaurants”. But I still will recommend including this category “chinese food restaurants” if this is what you mainly need.
